Background
I really like cookies. Actually, I like sweets of all kinds, but I really like cookies. In the process of reading through another food blog, I came upon an embedded video player displaying a video recipe for quick 3-ingredient nut cookies. I am annoyed by embedded video players on websites, but this video seemed interesting. I subsequently attempted the recipe.

Aside from the embedded video player, this recipe can be found here. The cookie is essentially and egg white whipped with sugar to medium/stiff peaks with finely ground nuts folded in.
Epicurious, the site which hosts this video and many others for 3-ingredient recipes, is a good site with a lot of good content. They have been hit-or-miss for me, though.
Result
I enjoyed these cookies. I would, however, do a few things differently next time. First, I would grind the nuts I was using more thoroughly than I did this time. I gut a fairly coarse texture because I was impatient and just wanted to have cookies. Second, I would probably double this recipe just for the simple fact that if you’re going to whip one egg white by hand, you really might as well whip two and get double the cookies.
