Satisfied with the results of attempts to cook a wheat flour-based pan pizza, I went looking for a different material with which to make pizza crust. I found a video on the Food Network website that explained how to make a pizza out of chickpea flour. The result is similar to Socca, a french baked thing made of chickpea dough and often topped with onions or herbs/spice.
The explanation of the concept, described as a “Chickpeazza”, can be found on the Food Network website here. I went online to find an actual recipe for socca somewhere, but I can’t remember which specific recipe I used at this point. Seriously though, just google “socca recipe” and you should find something that’ll work. If you can’t find chickpea flour, grind dry chickpeas in a food processor or blender as done in the video and then sift the resulting “flour”.
I used olive oil for the sauce and a pre-shredded italian cheese blend again. Toppings included various vegetables from the local HyVee salad bar.
Overall I enjoyed this, but not to the degree that I would eat this as pizza regularly. The crust tasted very earthy (as chickpeas tend to do) and the overall structure was moist and floppy. This would be fine for an appetizer eaten alongside something else, but I really like crispy pizza crust. I think in the future I will try to make a normal, non-pizza socca as a part of a larger meal.
