I like enchiladas. I wanted to try making enchiladas at home. I found a recipe and did so. The recipe I used for these enchiladas can be found here. It is another recipe from Budget Bytes. The only real modification I made was eliminating the sour cream from the filling, as I do not like sour cream and wished to reduce the overall caloric impact of the dish.
These enchiladas turned out…okay. I wasn’t crazy about them, but I can’t claim that there was anything inherently wrong with the recipe, either. The shredded chicken with cheese and green chiles in the filling tasted great, as did the canned enchilada sauce with mexican cheese blend that was dosed across the top of the pan. It’s probably mostly me, as I’m not a huge fan of chicken in general. In the future I might try to find a recipe for green enchilada sauce as opposed to using canned sauce.
