I like desserts that are lemon-flavored. I happened to see an episode of Everyday Italian in which Giada di Laurentis was making these cookies and (purportedly) sending them to a college student in a care package. I don’t have a college student to send care packages to, but I do like to bake cookies and I also like to eat things. That combination of motivations, in addition to needing cookies for a bake sale for a local band I play in, resulted in me baking these cookies. The recipe for the cookies can be found here. I don’t go out of my way to watch Giada’s programs, but every now and then I’ll see her make something and decide to try it.

As stated above, I’ve made these cookies before and I’ll likely make them again in the future. The use of ricotta cheese in the cookies makes them especially light and creamy, while the glaze is packed with tart, lemony deliciousness. I was only left with about a fifth of the cookies I brought to the bake sale at the end of the night, so I assume people besides me must like them, as well.
