Like so many other recipes that I’ve tried in the past, I saw this on an episode of Good Eats. In this particular episode, the focus ingredient was sweet potato, and the third recipe Alton made was a sweet potato waffle. I really like both sweet potatoes and waffles, so this was too much for me to pass on by.

This particular episode is one of several involving an “agent” who represents a certain food ingredient and is trying to get Alton to spruce up its image. The concept is completely goofy, which is perfectly in line with Good Eats in general. In fact, I’d go as far to say that the episodes with this theme are some of the most entertaining in the show’s run (I particularly like the episode on Okra, for example).
I really like these waffles. The combination of crispy texture with the sweetness of the sweet potatoes and the citrus flavor from some orange peel in the batter make these waffles simply delicious. They do take a bit of extra effort compared to other waffle recipes in that they require an egg foam be folded into the batter. Regardless, I really like this recipe and have made it several times since July, even going as far as trying substituting different types of roasted squash and spices for the sweet potato.
