
Two things happened somewhat simultaneously here. First, I saw more eggplants appearing at the farmers’ market. Second, a rerun of Alton Brown’s “Good Eats” came on that was focused on eggplant. What did I do? I bought some eggplants and prepared some eggplant steaks.
The recipe for eggplant steaks can be found here. Nothing more really to say here. I made the recipe as directed with no deviations or changes.
These turned out pretty well. Even with the treatment of the eggplant (salting, rinsing, wringing out, saucing and broiling) they still had a slightly soggy texture. The texture was, however, better than what I had gotten with previous attempts to cook eggplant. If you like eggplant, I’d say give this one a go. If not, well, it’s probably not going to make you a lover of the berry.
