I was, again, watching reruns of “Good Eats” when the episode about making waffles came on. Alton ran through how to make a great basic waffle, but then described how to make a good chocolate waffle. I decided I wanted to try to make both. I also decided I didn’t want to make basic and chocolate waffles separate from one another, however, and instead made waffles that were half basic, half chocolate.

The recipe for the basic waffle can be found here. The recipe for the chocolate waffle can be found here. Nothing more to say about either, really. I followed both recipes exactly (except for the part about using a circular waffle iron, because I only had a rectangular one on hand).

These turned out great! I highly recommend either recipe to anyone who likes waffles, either in the combination I tried or separated out. Both recipes make a crispy, satisfying waffle that can stand the rigor of being frozen, thawed, and toasted back to life.
