At one time Netflix had the Good Eats episode in which Alton Brown spends an entire episode cooking and explaining Pad Thai. He convinced me to try it, as well. The recipe for Good Eats Pad Thai can be found here.
I enjoyed this recipe. There’s a good mix of flavors and textures on account of the variety of ingredients that go into the dish. It also feels fairly satisfying putting this dish together, as it does take a certain amount of time to assemble the sauce for the dish from tamarind paste, fish sauce, and other things. Overall, I really like it and plan to make it again in the future.
That being said, I might change just a few things for next time. For one, though I enjoy the flavor of the tofu, I’m still not all that crazy about the texture. I would probably try making this dish with meat in the future, most likely some sort of small shrimp in the 31-40 count range.
Second, I would also like to try making this with a different style of noodle. I opted for banh pho* style noodle when I made this Pad Thai, and while the noodles taste good and aren’t overdone or anything, they just don’t look that great in the bowl. If I were to do this dish again (and I likely will), I would try it with rice vermacelli.
