I liked my waffled falafel by itself, but also figured it might taste good inside a wrap with some veggies and hummus. It turns out that it did. There’s really no recipe for this. The waffled falafel recipe can be found here. The salad consisted of fresh chopped tomatoes, kalamata olives, pepperoncini, and cucumber. It was dressed with a little olive oil and vinegar with some salt and pepper. You don’t really need a recipe for that, just add what vegetables you like and add oil, vinegar, and spices that you like to the mix. Also, I used store-bought chipotle hummus.

I enjoyed this wrap. It was easy to put together and the resulting contrasting textures and flavors of each ingredient made the whole thing great. The only thing that I’d do differently is find better pita bread. The whole wheat pitas that I used tasted like what I imagine sandpaper might taste like.
